Continuing on our breakfast theme…
have you tried these delicious banana muffins?! They are so moist.

Yeah I said it.

Yields: 24 quite small Muffins or 12-13 large muffins | Prep time: 5-7 min


Wet Ingredients:

  • 6 large eggs

  • 4 Tbsp. coconut oil, melted

  • 6 Tbsp. maple syrup 

  • 1 tsp apple cider vinegar

  • ½ tsp, vanilla

  • 4 large bananas, ripe

DRY Ingredients:

  • 2 cups almond flour 

  • ¼ cup coconut flour 

  • 1/2  cup tapioca starch

  • 1 ½ tsp. baking soda 

  • 1 tsp. baking powder 

  • ½ tsp. salt 

A baking tray full of prepared grain-free banana muffins.

DIRECTIONS:

  1. Put all the wet ingredients into the blender, and blend until smooth.

  2. Add dry ingredients and blend until mixed (don’t over blend).

  3. Bake at 350 (depending on oven) for 22-28 minutes.
