we'd like to introduce you to a great new breakfast option!

Yields: 6-8 servings | Prep time: 5 min 


Ingredients:

A prepared bowl of vanilla chia seed pudding.

1/2 cup chia seeds

1 can full-fat coconut milk

3 cups almond milk

1 tsp. vanilla extract or 1/4 tsp. vanilla powder

3 Tbsp. raw unpasteurized honey or maple syrup

Directions:

1. Place coconut milk and almond milk in a large bowl or Tupperware (with a lid).

2. Whisk in chia seeds, vanilla, and sweetener. Taste and adjust sweetness to suit your personal preference.

3. Pudding will keep in a sealed container in the fridge for up to 5 days. 

4. Top with your favourite toppings. Fresh fruit, coconut ribbons, nuts, seeds, goji berries or nut butter. How's that for easy?!

NOTE: If the coconut milk is very hard and lumpy, it's best to blend it for a few seconds or whisk vigorously.
