if you need a break from cookies & muffins….
Yields: 18-20 bites| Prep time: 10-15 minutes
Ingredients:
base:
6 medjool dates (pitted and soaked for 10 minutes)
1/4 cup cocoa powder
1 cup shredded coconut
1/4 cup almond butter
1 tsp vanilla
2 tbsp chai mix
pinch of salt
fold in:
1 tbsp cacao nibs
1 chopped medjool date
1/4 cup toasted buckwheat groats
1/4 cup rolled whole oats
Directions:
Blend base ingredients until super smooth in a blender or food processor. Adjust to your desired sweetness level (if you like it a little sweeter, add a dash of maple syrup). If it is too sticky, add a little water.
Once it is smooth, add in oats, buckwheat groats, nibs, and a chopped date. At this point, you can add in any other desired mix-ins that you’d like! We added a little orange zest.
Roll them into small balls, and you can roll them in cacao, chopped nuts, rose petals, orange zest, cinnamon, sugar.. the world is your oyster!
Store in the fridge for 2 weeks, then transfer to the freezer.
