Everyone needs a go-to cookie. Why not make it healthy?
Yields: 12 cookies | Prep time: 15 min | Bake time: 12 - 14 min
Ingredients:
1/4 cup + 2 Tbsp almond butter (or, substitute your favourite nut butter)
2 Tbsp melted coconut oil
1 tsp vanilla
2 Tbsp apple sauce
1 Tbsp maple syrup
¼ cup blanched almond flour
1/4 cup + 1 Tbsp. oat flour
1/4 cup + 1 Tbsp coconut sugar
1/2 tsp baking powder
1 tsp ground psyllium husk
1/4 tsp sea salt
1/3 cup chocolate chips, or a chopped up dark chocolate bar
Directions:
1. Preheat oven to 350 F degrees. Line baking sheet with parchment paper.
2. Cream together vanilla, coconut oil and nut butter until well combined. Add coconut sugar, maple syrup and apple sauce and beat for one minute more.
3. One by one, beat in the baking powder, oat flour, psyillium, and almond meal. The dough should be slightly sticky. Fold in chocolate chips.
4. Chill in the fridge for 30 minutes.
5. Using cookie scoop or spoon, scoop 1-inch balls onto prepared sheet. Leave 3 inches between each cookie.
6. Bake for 12-14 minutes until golden brown on the bottom.
7. Store in an airtight container or bag for up to a week. Cookies freeze well for up to 3 months.
